Cooking Class

I've been so busy with the house, baby Bianca and other things that Giovanna is missing an alone time with me. So yesterday Giovi and I had a fun time together in a cooking class. We followed the recipe, chopped the veggies, cooked, and ate our own food for dinner.


I was impressed Giovanna actually ate her dinner! She is very picky when it comes to food, but this time she did so good! I realized that maybe she eats better when she participates on the cooking process. I will definitely try that at home!


We made a delicious Garbanzo Bean Salad and a couple of Bagel Pizzas. Giovanna picked cucumbers as her pizza topping and I chose cherry tomatoes, onions, and pepperoni. 

After dinner we made a few smoothies of different flavors. The kids got to blend their own smoothies in a very fun way using a bike blender! How cool is that?


Giovanna loved every second of it, and she is looking forward to try our next recipe!

Garbanzo Bean Salad - Serve 6

Ingredients:
1/2 cup lemon juice
3 tbsp olive oil
1 clove minced garlic
1 1/2 cucumbers, chopped small
1/2 of a red onion, chopped small
1 1/2 cups cherry tomatoes, halved
1 1/2 cans garbanzo beans, drained and rinsed
Salt and pepper, to taste
2 tbsp chopped parsley (or more to taste)

Directions:
1. Squeeze the lemon juice into your serving bowl. Add the olive oil and minced garlic.
2. Add cucumber, red onion, cherry tomatoes, and garbanzo beans to the bowl and stir to combine.
3. Season with salt and pepper to taste. Sprinkle parsley to top to garnish.

Bagel Pizzas

Ingredients:
Whole-wheat bagels sliced in half
1/2 cup pizza sauce (per bagel)
1/2 cup mozzarella cheese (per bagel)
Desired toppings: pepperoni, pineapple, bell pepper, olives, etc.

Directions:
1. Place 1 tablespoon olive oil in a nonstick skillet over medium heat. Place bagel haves on the skillet cut-sides down. Toast until golden.
2. Place bagel halves on a plate, toasted sides up. Spread each bagel-half with pizza sauce, cheese, and desired toppings.
3. Place bagels back in skillet (pizza-side up). Cover the skillet with a lid and cook until the cheese has melted (5-10 minutes).
